Healthy Dark Chocolate Waffles

Makes: 1 Dozen

 

Ingredients:

 

1 1/4 Cups White Flour

1 1/4 Cups Whole Wheat Flour

1/2 Cup Dried Coconut (optional)

1/2 Cup Chopped Nuts (any kind)

1/2 Cup Dark Chocolate Chips

1 Tbsp. Cinnemon 

4 tsp. Baking Powder

1 tsp. Sea Salt or Pink Salt

2 Eggs

2 1/4 Cups Milk

3/4 Cup Melted Coconut Oil

1/2 Cup Pureed Sweet Potatoes (optional)

 

Note: If you plan to freeze them for convienience later, adding 1/2 cup cooked pureed sweet potatoes will keep them from getting hard in the freezer. You can use baby food sweet potatoes if you don't want to prepare them yourself

 

Preparations

     Preheat Waffle Iron.

     In large bowl beat butter, sugars, and eggs, until light and fluffy.

     Add in dry ingredients.

     Slowly mix in wet ingredients.

 

simple dollop about 1/3 cup onto waffle iron, close the lid, and allow to cook to desired crispness.
