
Citrus Glazed Salmon

Cook Time: 30 min
Makes: 2 cups
Ingredients:
1 cup Orange juice
2 Tbsp. low-sodium soy sauce
2 Tbsp. Honey
2 tsp. Minced garlic
2 tsp. Ground ginger
1 tsp. Lemon juice
1/4 tsp. ground red pepper
4 (6 oz.) Salmon Fillets (or other fish or chicken)
2 Tbsp. Olive Oil
pinch salt
sesame seeds (optional)
Preparations
Place ingredients in a large zip-lock plastic bag or container.
Add chicken or fish; seal bag, and marinate in refrigerator 1 hour.
Be sure to turn occasionally.
Remove fish, reserving marinade.
Preheat broiler.
Place chicken on a foil lined Cookie sheet coated with Olive Oil.
Broil for 8 minutes on each side, or until done.
While it cooks, place reserved marinade in a small saucepan, stirring with a whisk until blended. Bring to a boil over medium-high heat. Reduce heat, and cook for 1 minute or until thickened. Brush more sauce over the fish and sprinkle with sesame seeds if desired. If making with Chicken, you may choose to serve the remaining sauce on the side.
